VITICULTURE / VINIFICATION
This is a classic, zesty white wine from Castilla y León in Northern Spain. The dramatic difference between day and night temperatures in this region creates a perfect balance between sweetness and acidity in the wine.
Our winemaker has gone for a fresh, unoaked style, with fermentation taking place in stainless steel tanks at a cool, controlled temperature of 15ºC to preserve pure fruit flavours. Further character is added through battonage, during which the wine is stirred on the fine lees for 3 months.
