TASTING NOTES

Colour: Vivid purple with a bright red rim
Nose: Bursting with raspberry, cherry and violet aromas and complex earthy notes of spice with a touch of leather, vanilla and mocha
Palate: Medium to full-bodied with fine, soft tannins, well balanced acidity and well-integrated oak flavours. Raspberry and wild berry fruits give way to a long, smooth, spicy finish
Food match: Excellent with all red meats, game, rich casseroles or pasta dishes.

VITICULTURE / VINIFICATION

For us, Garnacha is one of  Spain’s finest grape varieties, producing ravishingly fruity wines with a wonderful spicy character. This is especially true when it’s old vine Garnacha like this blockbuster made by top producer Bodegas Aylés, based in Aragón.

Harvesting took place in early October when the grapes had reached optimum ripeness.  The grapes were machine harvested from 15 year-old vines grown on calcareous clay soils. They were then de-stemmed and semi-crushed before a prefermentative maceration at low, controlled temperatures of 8-10ºC for four days. The wine was then fermented in temperature controlled stainless steel tanks.  50% of the wine spent four months in high quality oak barrels to add a vanilla smoothness and a toasty, spicy touch to the flavours.
